I use Plausible Analytics, which is a GDPR, CCPA and cookie law compliant site analytics tool. It's lightweight, easy to use, and puts your privacy first. I'm mostly interested in growing my newsletter and seeing what content is most popular among new and current subscribers. And for the sake of transparency, I have made my analytics dashboard public so that you can see exactly what is being gathered.
